Antipasto Pasta Salad

This is a great side dish for all those summer barbecues and takes only minutes to prepare.

Ingredients:

1 8-ounce package tri-color Rotini pasta
1/4 cup red onions, diced
1/4 cup salami, diced
1/4 cup artichoke hearts, chopped
1/4 cup cherry tomatoes, halved
1/4 cup Provolone cheese, shredded
1 cup of your favorite vinaigrette salad dressing

Bring a large pot of water to a boil and cook pasta until tender (about 8 minutes.) Drain and rinse in cold water.

Allow pasta to cool completely, then mix in remaining ingredients.

Refrigerate for at least two hours before serving.

Serves 8.
