Frau Held's Apple Cake with Coffee Glaze
This Betty Held classic recipe is one of the dessert choices on our group menu. As such, it's one of the most requested recipes we have.
Apple Cake
4 cups grated apples (peeled)
1/2 cup margarine
2 cups sugar
2 cups flour
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla
1/2 cup chopped walnuts or pecans (optional)
Preheat oven to 350 degrees. Spray, or grease, and flour a 9” x 13” cake pan.
1. Cream margarine and sugar together in mixing bowl.
2. Add eggs, one at time until well blended.
3. Add vanilla.
4. Sift dry ingredients together and add to wet mix. Mix until well-blended.
5. Add apples, mix well.
6. Stir in nuts by hand.
Pour batter in cake pan and bake for 45 minutes. Let cool completely before cutting.
Coffee Glaze
4 tablespoons butter
1/4 cup brown sugar, loosely packed
1/4 cup milk
1 teaspoon vanilla
1 teaspoon instant coffee
1 1/2 cups confectioner’s sugar, sifted
1. In a saucepan melt butter over medium heat.
2. Add brown sugar, milk and instant coffee, stirring constantly until sugar and coffee are dissolved and mixture bubbles at the edge.
3. Remove pan from heat and whisk in confectioner’s sugar until icing is smooth.
4. Drizzle over cooled cake.
